My fondest travel memories are those made on horseback. These moments between heaven and earth give free rein to your imagination.
The Pelham is a tribute to my love of horses, but also the pleasure of entertaining.
Throughout my travels I keep in memory certain flavors, certain perfumes and many images of happy moments, which I wish to share with you.
Chef Walter Abad has been able to find these notes of Asia and the Orient which come to dance and match with traditional French cuisine.
